Gluten Free Coconut Date Cookies
- 1 1/2 cups almond flour
- 3/4 stick of butter, softened (It called for a whole stick but I didn't want that much butter. Also, may be able to substitute coconut oil for butter. )
- 1/4 cup sugar (I used raw cane sugar)
- 1 egg
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon baking powder
- 1/3 unsweetened coconut shreds
- 1/3 chopped dates
Directions:
- Preheat oven to 375*F.
- Combine all ingredients in a large bowl. Mix well until batter is blended evenly.
- Roll batter into 1-inch balls and place on a greased baking sheet.
- Bake cookies for approximately 12-15 minutes.
- Remove cookies from baking sheet and allow to cool on wire rack.
- Eat and enjoy!
